4You Get What You Pay For  May 04, 2009 By C. Evans
Okay so the Miracle Blade company has a terrible reputation, almost nonexistent customer service & doesn't make the worlds best knives by any means. So why the high rating? You get what you pay for. These are cheep n cheerful quality, which if that's what you're looking for, is fine in my opinion. Maybe you don't want to spend $200 on a set of knives? I know I don't.

These are cheep for a reason. They won't hold an edge as long as more expensive brands. They also tend to tarnish especially when placed in the dishwasher. But at this price you can afford to replace them once a year. Initially they're VERY sharp & with normal use will hold an edge for a fair amount of time.

The Fillet & Rock n Chop cleaver are my favorites. Both are great designs. The steak knives, while somewhat cheep looking, make short work of even the toughest steak. The others do their jobs well enough.

If you're on a budget or enjoy having a new set of knives often these will do the trick. If you view your knives as a status symbol or insist on only the best then these are not for you. You get what you pay for here.

5Wonderful, Wonderful set of Knives!  Nov 29, 2007 By David Nichols
I purchased a set of these knives with the block at a demonstration at the Puyallup fair in Washington State and I can happily say these knives are by far the best I've ever own! I got a set for me and my girlfriend and she absolutely loves them!! In fact, when it comes to food preparation, I'm the one that tells her to let all the food cutting to me because I really like using them. I'm so impressed with these knives that I am going to buy a set of them for my parents because the knives they own have to constantly be sharpened while these knives NEVER need to be sharpened!

2They ARE very sharp, but there are two critical problems...  Jul 17, 2009 By Just Lil' Ol' Me
First, be extremely careful with the chop & scrape 'cleaver'. I've had two of them disintegrate the handle in use. The second one almost cost me a hand.

Now, the bigger problem. These knives are made from the cheapest source of stainless steel you could imagine. As I understand it, China is famous for using 'recycled' stainless, which is not pure stainless. It has bits of iron and whatever else is lying around in it. This is where your rust and stains come from. I understand China has no rules concerning perceived steel quality.

Now, that doesn't mean you can't get a good knife made in china. A lot of high-end knives are made in china. I have a set of Rosenthal AG knives that are beautiful, and made in china. Been in the dishwasher a dozen times, and not a single spot or rust spot.

The difference? They are spec'd, and are made from, true virgin stainless steel. Not the cheap, crappy recycled crap these are (apparently) made from.

I will say this. From a use/functional standpoint, the Rock n Chop cleaver (which is a modified Santuko), is the most brilliant Knife I've ever used.

It's just a bummer to have to break out the stainless polish weekly to remove the rust stains, which occur even with hand washing.

5The only knives for me!  Jul 10, 2007 By M. M.
I have been using these knives every day for over 3 years.

If you like to slice and dice your owns meals this is the only set you will ever need. I love the flat chopping blade and the balance on these knives are wonderful. The gripe on the handle is great no matter the use.

Protect your investment, store your knives in a Miracle Blade Butcher Block, hand wash them so the don't rub up against other knives or silverware.

If you know anything about stainless steel then you know it's not rust resistant, and the way you store and wash them is the most important thing. The stainless steel surface has a protective layer of minimum of 10.5% chromium content. The chromium forms a passivation layer of chromium(III) oxide (Cr2O3) when exposed to oxygen. The layer is too thin to be visible, meaning the metal remains lustrous. It is, however, impervious to water and air, protecting the metal beneath. Also, this layer quickly reforms when the surface is scratched.

Stainless Steel, the name originates from the fact that stainless steel does not stain, corrode or rust as EASILY as ordinary steel. This material is also called corrosion resistant steel when it is not detailed exactly to its alloy type and grade, particularly in the aviation industry. As such, there are now different and easily accessible grades and surface finishes of stainless steel, to suit the "environment" to which the material will be subjected in its lifetime.

The information on Stainless steel came from Wikipedia, the free encyclopedia.
