Sharp Enough to Trim a Finger Sep 22, 2009

I seem to need to cut myself with every new knife I get. The Kyocera 6" Nakiri was no exception. Good thing was though, it is so sharp, I barley felt a thing. This knife really does cut vegetables beautifully. It also glides right through cooked or raw meat. But, the other reviews are not kidding, the blade is delicate. I would not even cut a hard cheese with it. Not perfect for all situations but if you need to take apart 5 pounds of onions or julienne a few bunches of carrots then there is no better knife. The porous nature of the blade does make some minced herbs want to cling to it (think cilantro) and the edge is so sharp it makes me nervous to really whip the herbs off with my fingers. Just respect and baby the thing and you will get lots of great use out of it. The handle is a bit slippery when wet.

By Tom Mackie Like all Kyocera ceramic knives, this is a great knife AS LONG AS you remember that as with any ceramic knife, if you drop it onto a hard surface, you'll literally be picking up the pieces! Like all ceramic knives, manufacturing constraints are such that none are very big, so there will always be a place in my kitchen for my favorite 10" Wide Wusthof chef knife. "Libero Tempore"
This blade does what it supposed to - it cuts beautifully. Very well balanced, it seats in your hand comfortably, allows you to make precise, nice and thin cuts. You'd have to pay respect to it, as it is sharp. Do not push it down, like many do, but slice with movement along the blade, and it will demonstrate to you how work should be done. Five stars, so far.

This is a great vegetable, fruit, peeling, chopping, and mincing knife. Forever sharp and not very expensive. I recommend this knife as an addition to anyones set.

Ceramic Cutting Sep 29, 2010
By Mephistopheles I ordered this knife because I had seen it on various cooking shows. I think it is a nice sharp knife. It is brittle so one must take care not to drop it and/or press or smash garlic with it.
The size is somewhat of a limitation. I am used to cutting with a full size Chinese cleaver and this is a little less than half the size of that.
After purchasing it for around $100, I was disappointed to see it in a local culinary shop for $69.
